The Chocolate & Coffee Shop
Discovered in Central America, the cocoa was mainly exported to the rest of world by spanish "conquistadors" . Originally prepared as a bitter & spicy drink ("tchocolatl" in Anahuac language spoken by Aztec people), chocolate become crispy, soft and melting as tablets, then pralines : manons (sort of pralines) are created in Belgium in the beginning of XXth century. Being formerly a dukedom of the Crown of Spain and a growing harbour platform (Anvers) with countries producing cocoa (like Ivory Coast, Ghana, Brasil ...), the Belgian Flandres (Brugge) :
has a temperate weather which revealed ideal to make and store the chocolate,
ingredients to make some chocolate types (milk).

Being very odour sensitive, fresh chocolates can be stored up to 2 months in a dry and temperate place (17 to 19 degrees Celsius). Storage in a refrigerator is not recommanded except for a short period (2 to 3 days).
